Vegetarian Tofu Japchae

Japchae is a popular Korean dish that is savoury with hints of just the right amount of sweetness. Traditionally, it is made with vegetables and sweet potato starch noodles that are also known as glass noodles because of their texture. However, it can also be made with rice noodles to substitute the potato starch noodles as these might not be easily available in some places. It is a dish that is not just healthy but also delectable and filling. And it is also very easy to create this dish; here is a simple, quick recipe to help you indulge in this delicious, celebratory dish and to also treat your taste buds.

INGREDIENTS:

1/4 cup soy sauce

3 tablespoons brown sugar

1 cup diced firm tofu

1 cup sweet potato starch noodles / rice vermicelli

Fresh spinach

1 tablespoon vegetable oil

1 cup thinly sliced yellow / red onion

2 cloves minced garlic

6-7 thinly sliced button mushrooms

1/2 cup shredded carrots

2-3 spring onion stalks

1 1/2 teaspoons sesame oil

1 teaspoon sesame seeds

METHOD:

  • In a bowl whisk together soy sauce and brown sugar.
  • Add in the tofu in the sauce and marinate it while you prep other ingredients.
  • Boil the water in a pot and add in the noodles. Cook the noodles till they are soft and slightly chewy.
  •  Boil the spinach for 1 minute until wilted and then rinse it under cold water.
  • Heat a large saute pan over medium-high heat and add the vegetable oil. Once heated, add in the onion, garlic, mushrooms and carrot and sauté for 2 minutes.
  • Add in the spring onion and sauté for a minute.
  • Add the tofu with the sauce and cook it till it becomes warm.
  • Lower the heat and add the noodles, spinach and sesame oil. Stir well.
  • Serve it on room temperature and garnish with sesame seeds.
