It is no surprise that everyone loves chocolate and no good meal is complete without a good dessert. However for vegetarians and specially vegans, there are not many choices when it comes to baked desserts. Here’s a recipe that is equally sweet, salubrious and scrumptious to indulge in which can be relished on its own or with any icing or topping of your choice.

INGREDIENTS-
Dry ingredients-
- Wheat flour – 1 ½ cups
- Granulated sugar – 1 cup
- Cocoa powder – 1/3 cup
- Baking soda – 1 tsp
- Salt – ½ tsp
Wet ingredients –
- Water – ½ cup
- Club Soda- ½ cup
- Oil – ½ cup
- Pure vanilla extract – 1 tsp
- Vinegar – 1 tbsp
METHOD-
- Mix all the dry ingredients in a bowl and the wet ingredients in a separate bowl.
- Slowly incorporate the wet ingredients in the dry ingredients and mix using the cut and fold method till the batter is mixed to a ribbon consistency.
- Add the batter to the cupcake moulds.
- Put it in a pre-heated oven to bake at 180o C for 10-12 mins.
- Before taking out the cupcakes do the knife test to check if they are baked completely and then remove it if the knife is clean.
- Relish it either hot or cool.
