Vegan Chocolate Cupcakes

It is no surprise that everyone loves chocolate and no good meal is complete without a good dessert. However for vegetarians and specially vegans, there are not many choices when it comes to baked desserts. Here’s a recipe that is equally sweet, salubrious and scrumptious to indulge in which can be relished on its own or with any icing or topping of your choice.

Cook Time: 10-12 mins

Total Time: 20-22 mins

INGREDIENTS-

Dry ingredients-

  • Wheat flour – 1 ½  cups
  • Granulated sugar – 1 cup
  • Cocoa powder – 1/3 cup
  • Baking soda – 1 tsp
  • Salt – ½  tsp

Wet ingredients –

  • Water – ½ cup
  • Club Soda- ½ cup
  • Oil – ½  cup
  • Pure vanilla extract – 1 tsp
  • Vinegar – 1 tbsp

METHOD-

  • Mix all the dry ingredients in a bowl and the wet ingredients in a separate bowl.
  • Slowly incorporate the wet ingredients in the dry ingredients and mix using the cut and fold method till the batter is mixed to a ribbon consistency.
  • Add the batter to the cupcake moulds.
  • Put it in a pre-heated oven to bake at 180o C for 10-12 mins.
  • Before taking out the cupcakes do the knife test to check if they are baked completely and then remove it if the knife is clean.
  • Relish it either hot or cool.
